chiliThis chili is so flavorful, and hearty. The beans are loaded with tons of protein and fiber, you won’t evenknow it’s meatless chili!! We like our chili with a little kick, so adjust ingredients according to your spicy meter.

What you’ll need:

  • 3 tbs olive oil
  • 1 white onion- chopped
  • 4 garlic cloves- diced
  • 1 jalapeño- we leave a few seeds – but remove if you don’t like that much heat
  • 1 green bell pepper- chopped
  • 1 red bell pepper- chopped
  • 1 cup of veggie stock
  • 3 12 oz cans black beans- drained and rinsed
  • 1 12 oz can kidney beans- drained and rinsed
  • 2 12 oz cans of diced tomatoes
  • 1 12 oz can of tomato paste
  • 2 tbs ground cumin
  • 1 tbs garlic powder
  • 1 chili kit- this is our secret ingredient- you can find it in most grocery stores, where they keep the taco seasonings. If you can’t find the kit, just get 2 packets of chill seasoning, medium or hot, whatever you prefer.
  • 1 tbs celtic salt
  • 1/2 tbs of Sriracha
  • 1 1/2 tbs of ground pepper

How to prepare:

  • Heat olive oil in a stock/soup pan
  • Add in garlic and onions- sauté about 2 minutes
  • Add in jalapeño- sauté about 2 minutes
  • Add in 2 cans of diced tomatoes
  • Add in stock, beans, bell peppers, tomatoes paste, salt, pepper, garlic powder, and chili kit
  • Stir well and cook for at least 30-45 minutes on medium- low heat to let all the flavors infuse.

Garnishes:

  • Avocado
  • Cilantro
  • Green onion
  • Lite greek yogurt or sour cream
