Frittata’s are great, because it makes enough for a few meals to enjoy throughout the week. We will even have frittata’s for dinner sometimes, they are a great go to- Fast, easy, nutritious, & plenty for leftovers.

What You’ll Need:breakfast3

  • 8 Eggs
  • 1/2 Red bell pepper chopped
  • 1/2 Red onion chopped
  • 1 1/2 Cups of mushrooms chopped
  • 1/2 Jalapeño with seeds- if you want a little extra kick, Remove the seeds for less of a kick
  • 3 Cups spinach
  • 4 oz Goat cheese
  • Salt and pepper to taste
  • 1 Tbs olive oil
  • 1 Tbs garlic


How to Prepare:

  • Beat eggs in a bowl- add salt and pepper to taste
  • Heat olive oil in skillet over medium heat
  • Add onion and garlic- sauté for 2-3 minutes
  • Add mushrooms, and peppers- sauté until veggies are soft and cook through- about 5 minutes
  • Add spinach- sauté until spinach has wilted- about 2 minutes
  • Season with salt and pepper
  • Place vegetables in sprayed frittata pan, cover with egg mixture
  • Sprinkle goat cheese evenly over veggies, and eggs
  • Cook on 400 degrees until golden brown- about 20-25 minutes
  • We like to turn on the broiler for the last few minutes to crisp it up a little bit.
