Frittata’s are great, because it makes enough for a few meals to enjoy throughout the week. We will even have frittata’s for dinner sometimes, they are a great go to- Fast, easy, nutritious, & plenty for leftovers.
- 8 Eggs
- 1/2 Red bell pepper chopped
- 1/2 Red onion chopped
- 1 1/2 Cups of mushrooms chopped
- 1/2 Jalapeño with seeds- if you want a little extra kick, Remove the seeds for less of a kick
- 3 Cups spinach
- 4 oz Goat cheese
- Salt and pepper to taste
- 1 Tbs olive oil
- 1 Tbs garlic
How to Prepare:
- Beat eggs in a bowl- add salt and pepper to taste
- Heat olive oil in skillet over medium heat
- Add onion and garlic- sauté for 2-3 minutes
- Add mushrooms, and peppers- sauté until veggies are soft and cook through- about 5 minutes
- Add spinach- sauté until spinach has wilted- about 2 minutes
- Season with salt and pepper
- Place vegetables in sprayed frittata pan, cover with egg mixture
- Sprinkle goat cheese evenly over veggies, and eggs
- Cook on 400 degrees until golden brown- about 20-25 minutes
- We like to turn on the broiler for the last few minutes to crisp it up a little bit.
