So I’m super excited about this little concoction I came up with. The last time I was in Florida, I had the most delicious cauliflower wrap. I know it sounds kind of boring right, but this is where things get really interesting- It was smothered in this amazing, spicy, gooey dairy free sauce!! Which for someone like me who doesn’t eat dairy very often, this was a real treat.
I don’t know what the heck was in it, but my mouth waters just thinking about it! Since I don’t live in Florida, I wanted to try to create my own version of it, and It came out pretty good. I have to say! It was a crowd pleaser.
So now I want to share it with you guys!!
This is a great go to for anyone who doesn’t eat a lot of meat, because this baby is jam packed with protein.
The ingredients serves about 5-6 wraps- so you can make a batch and eat it for a few days
What you’ll need:
-Quinoa
-About 1/4 cup cashews
-1 head of cauliflower
-2 cans of chickpeas
-3 or 4 TBS Spicy mustard- we like the Boars Head brand- with the horseradish mixed in- or Grey Poupon
-3 or 4 TBS Horseradish sauce- we like the Boars Head brand
-3 or 4 TBS olive oil- enough to coat the bottom of a tupperware container
-1 TBS white vinegar
-Salt, Pepper, Garlic to flavor
-Whole Wheat Flat Out Wraps
How to Prepare:
-Prepare Quinoa- according to directions- usually 1 cup quinoa to 2 cups water- I like to cook my quinoa in veggie broth and 1 veggie bullion cube to add more flavor
-Cut up cauliflower
-Toss cauliflower and chickpeas in tupperware container with about 1 TBS of olive oil, and salt, pepper, and garlic
-Mix it all up, and place on sprayed baking sheet
-Bake on 400 for about 25 minutes
-In the same tupperware container, add in additional olive oil, mustard, horseradish, and vinegar
-Mix it all up, and make sure the bottom of the container is coated
-Sauté cashews in a pan on medium heat for about 5 minutes- you just want to warm them up
-When cauliflower is ready, toss in container and mix it all together while still warm
-This create that yummy sauce!!!!
-Warm up Flat Out wraps in oven or toaster oven for a few minutes
Plate Wraps:
-Take about 2 TBS or so of the quinoa and dish it out onto wrap- make sure to leave room for all the other goodies
-Add in the Cauliflower mixture
-Sprinkle a few cashews on top
-Wrap it all up, and your good to go!!1
