Turmeric Tahini Roasted Cauliflower Spinach Salad

IMG_5764This was so quick, easy and seriously DELICIOUS!!!

Makes about 3-4 servings

What you’ll need:

-4 cups of Cauliflower Florets

-2 TBS Tahini

-2 TBS Olive Oil

-Juice of 1 Lemon

-1 Tsp Turmeric

-5 ish cups of Spinach- enough to fill a big salad bowl

-1/2 Sliced Red Onion

-1 Cup of cooked whole wheat pearl couscous

For the Dressing:

-Juice of about 1/2 of a large Lemon

-3-4 Tbs olive oil

-Salt, Pepper, Garlic to taste

How to Prepare:

-Cook Couscous according to instructions- We like to cook ours in veggie broth with 1 vegetable bullion cube for extra flavor

-In a tupperware container mix Tahini, Lemon juice, Turmeric, Olive oil, and Salt & Pepper

-Cut Cauliflower into small bite sized pieces

-Toss Cauliflower into tupperware and mix up, until cauliflower is coated throughly

-Roast Cauliflower at 425 for about 25 minutes

-MIx Spinach & Red Onion in Salad Bowl

Let Couscous and Cauliflower cool slightly- so it’s not pippin hot!!

-Add cooked couscous, Roasted Cauliflower onto the salad

-Toss Salad with Lemon and olive oil

-Taste with Salt, Pepper & Garlic
